Chicken casseroles

Delicious Chicken casseroles !

This recipe was given to me by my Italian grandmother, and every time I serve it, it becomes the talk of the town!

Serve this casserole with some steamed green beans, a light tomato-cucumber salad, or even a crisp green salad dressed with Italian dressing to complete your dinner. Anybody at your table will appreciate the filling supper you’ve prepared, especially if you serve it with a crusty loaf of garlic bread.

Ingredients For Chicken casseroles

  1. 3 cups low-sodium chicken broth
  2. 1 1/2 cups long-grain white rice
  3. two minced garlic cloves
  4. One small onion, chopped
  5. one diced red bell pepper
  6. Two tsp olive oil
  7. Six to eight skinless, bone-in chicken thighs
  8. One tsp of dried Italian seasoning
  9. Half a teaspoon of salt
  10. 1/4 tsp black pepper
  11. One 14.5-oz can of chopped, undrained tomatoes
  12. One cup of finely shredded mozzarella cheese
  13. As a garnish, use fresh parsley.

Instructions For Chicken casseroles

  1. Set the oven temperature to 375°F. Be joyful and filled with love as you create a dinner that will satisfy your body and spirit.
  2. In a big skillet over medium heat, sauté the onion, garlic, and bell pepper for about 5 minutes, or until they are tender and aromatic.
  3.  Add the rice and stir, allowing it to toast slightly for two minutes. Next, add the chicken broth and cook the mixture gently.
  4. Add Italian seasoning, salt, and pepper to the chicken thighs. Tuck the chicken into the skillet of rice mixture.
  5. Cover the chicken and rice with the undrained canned tomatoes. The other ingredients will combine with the tomato juice, adding an incredible flavour to everything.
  6.  Bake the pan in the preheated oven for 35 to 40 minutes, or until the rice has absorbed all of the liquid, and the chicken is thoroughly cooked. Cover the skillet with foil or a lid.
  7. After taking the casserole out of the oven, cover it with the shredded mozzarella cheese and bake it for a further five minutes, or until the cheese is melted and beginning to turn brown.
  8. After allowing the casserole to settle for around five minutes, top it off with freshly cut parsley and serve. This enables the full fusion of all those mouthwatering flavours.

Variations & Advice:

  • If you are feeding fussy eaters who don’t like tomatoes or peppers, you might want to stick to a basic mixture of rice, chicken, and broth, then sprinkle with cheese. Sometimes things are best left simple!
  • To add even more Italian flavour to your mozzarella crust, stir in additional Parmesan or Asiago cheese.
  • Add some spinach or chopped zucchini when you add the tomatoes to secretly sneak in extra vegetables. It works wonders to encourage the younger generation to consume more greens. Recall that leftovers are a blessing! Make sure you have extra for those hectic weekday dinners by doubling the recipe; this casserole reheats well for lunch the next day.
