Recipe For Beef Lombardi
A flavorful casserole packed with egg noodles, cream cheese, tomatoes, and ground beef is called beef lombardi.
I understand that Christmas is quickly approaching and everyone is excited to hear about the newest appetiser laden with cheese or fudge, but let’s be honest: we all need to sneak in a little meal now and then. And this dinner is definitely one to remember! You’ll be saying, “What plate of holiday cookies?” and going back for seconds and thirds when you see the mounds of creamy onion cream cheese sandwiched between egg noodles and a hearty tomato sauce.
As an aside, I used Asian rice noodles to make this gluten free. Any gluten-free spaghetti can be used in its place. Egg noodles cannot truly be replaced with gluten-free alternatives, but the flavours are still fantastic. My family, who eats gluten, tried both the gluten-free and gluten-filled versions and didn’t find any issues with the texture difference. As I watched the family devour their dishes of egg pasta casserole, maybe I was just experiencing a case of “the grass is greener.”
ingredients For Beef Lombardi
- One pound of ground beef
- One 28-oz can of chopped, undrained tomatoes
- two minced garlic clove
- Two teaspoons of honey
- Two teaspoons of salt and black pepper
- One bay leaf
- 1 package of cooked egg noodles
- 1 8-oz package of cream cheese
- six finely sliced green onions
- One cup of sour cream
- Two cups of cheddar cheese, grated
Instructions For Beef Lombardi
- Over medium heat, brown the beef.
- Remove fat.
- Cook the garlic until it becomes mushy.
- Add tomatoes, honey, salt, pepper, bay leaf and Tabasco.
- Reduce the heat and simmer for half an hour.
- Take out the bay leaf.
- Add the sour cream, green onions, and cream cheese to the cooked noodles.
- Grease a 9 x 13 pan, then layer the tomato mixture, noodle mixture, and grated cheese in that order, finishing with the cheese on top.
- Bake, covered, for 30 minutes, or until bubbling and thoroughly heated in an oven warmed to 350 degrees.
- This can be frozen both before and after baking.
