These “snowball” cookies are made with my favorite ingredient of all time! They never last long in our house!
2 cups all-purpose flour
1/2 cup powdered sugar
1 stick of softened unsalted butter
2 teaspoons lemon zest
1/4 teaspoon salt
For the coating: 1 cup plus 2 tablespoons powdered sugar, 1/4 cup lemon juice powder
Instructions:
Preheat your oven to 350°F and line a baking sheet.
In a bowl, cream together the butter, powdered sugar, salt, and lemon flavoring.
Gradually mix in the flour until well combined.
Form the dough into 1-inch balls and place them on the baking sheet.
Bake for about 13 minutes, or until they are lightly browned.
For the coating, sift together powdered sugar and lemon juice powder in a bowl.
After baking, let the cookies cool briefly, then roll them in the sugar coating.
Allow them to cool completely before rolling them in sugar once more.
