 Ingredients:

For the Cilantro Lime Rice:

1 cup long grain white rice (uncooked)

2 cups water or vegetable broth

1 tablespoon olive oil

Juice of 1 lime (about 2 tablespoons)

2 tablespoons chopped fresh cilantro

Salt to taste

For the Black Beans:

1 can black beans (15 oz), drained and rinsed

1 tablespoon olive oil

1 garlic clove, minced

¼ teaspoon ground cumin

¼ teaspoon paprika or chili powder

Salt and black pepper to taste

Juice of ½ lime

 Instructions:

1. Cook the Rice:

Rinse rice until water runs clear. Bring 2 cups of water or broth to a boil. Add rice, salt, and olive oil. Reduce heat, cover, and simmer for 15–18 minutes, or until water is absorbed. Let sit 5 minutes, then fluff with a fork.

Stir in lime juice and chopped cilantro. Set aside.

2. Prepare the Black Beans:

Heat olive oil in a skillet over medium heat. Add garlic and cook for 1 minute. Add black beans, cumin, paprika (if using), lime juice, salt, and pepper. Stir and heat through, about 4–5 minutes. Adjust seasoning as needed.

3. Assemble:

Serve the black beans over the cilantro lime rice, or mix them together in a bowl. Garnish with extra cilantro or a lime wedge.
