Ingredients

For the Chicken

1–1.25 lbs boneless skinless chicken breasts or thighs

½ tsp cumin

½ tsp salt

¼ tsp black pepper

Juice of ½ lime

For the Bowl Base

2 cups cooked rice (white, jasmine, brown, or cilantro-lime rice)

1 avocado, sliced or diced

1 cup cherry tomatoes, halved

1 cup corn (fresh, canned, or pan-seared)

½ cup black beans

¼ red onion, thinly sliced

Fresh cilantro for garnish

Lime Yogurt Sauce 

¼ cup Greek yogurt

Juice of ½ lime

1 tsp honey or agave

1 tbsp water to thin

Pinch of salt

Instructions

1. Season the Chicken

Mix paprika, garlic powder, onion powder, cumin, salt, pepper, olive oil, and lime juice.

Coat the chicken fully.

2. Cook the Chicken

Option A — Pan-sear:

Heat a skillet to medium-high.

Cook chicken 5–6 minutes per side until golden and fully cooked (165°F).

Option B — Grill:

Grill over medium-high for 5–6 minutes per side.

Let rest for 5 minutes, then slice or dice.

3. Make the Lime Yogurt Sauce

Stir yogurt, lime juice, honey, water, and salt until smooth. Set aside.

4. Build the Bowls

In each bowl:

Add warm rice as the base.

Top with sliced chicken.

Add avocado, tomatoes, corn, black beans, and red onion.
