Ingredients 

Omelette

4 large eggs

2 tbsp milk or cream

¼ tsp salt

¼ tsp black pepper

½ tsp dried dill or parsley

1 tbsp olive oil

Filling

½ cup fresh spinach

1 tbsp olive oil

60–80g smoked salmon, thin slices

2 tbsp cream cheese OR Greek yogurt

1 tsp lemon juice

1 tbsp fresh dill or parsley, chopped

¼ tsp garlic powder

Black pepper, to taste

Instructions

1. Prepare the Filling

In a small pan, heat 1 tbsp olive oil.

Add spinach and cook for 1–2 minutes until wilted.

Set aside.

In a bowl, mix cream cheese (or Greek yogurt), lemon juice, herbs, garlic powder, and black pepper.

2. Make the Omelette Sheet

In a bowl, whisk eggs, milk, salt, pepper, and dried dill.

Heat a non-stick pan (preferably rectangular or medium round) on low–medium heat.

Add butter/olive oil.

Pour egg mixture and tilt the pan gently so it spreads evenly like a thin sheet.

Cook on low heat for 4–5 minutes until set (don’t flip).

When edges lift slightly and top is almost dry, remove from pan onto parchment.

3. Assemble

Spread the herb cream cheese mixture evenly on the omelette.

Lay smoked salmon slices across the surface.

Add sauteed spinach evenly.

4. Roll

Using parchment paper, roll the omelette tightly from one end to the other, like a Swiss roll.

Slice into spirals for a beautiful gourmet look.
