Amazing Baked Potatoes

Oven-baked potatoes with ultra-crispy skins and pillowy interiors, finished with olive oil, garlic, and herbs. Perfect as a side or loaded as a main.

Bake time: 55–65 minutes

Total time: 65–75 minutes

Ingredients

4 large russet or baking potatoes

2 tbsp olive oil

1 tsp coarse salt

½ tsp black pepper

½ tsp garlic powder

1 tsp dried rosemary or thyme

Instructions

1. Prep Potatoes

Preheat oven to 220°C (425°F).

Scrub potatoes clean and pat completely dry.

Prick each potato 3–4 times with a fork.

2. Season

Rub potatoes all over with olive oil.

Sprinkle generously with salt, pepper, garlic powder, and herbs.

3. Bake

Place potatoes directly on the oven rack (tray underneath).

Bake 55–65 minutes, turning once halfway, until skins are crisp and a knife slides in easily.

4. Finish

Slice open immediately.

Fluff insides with a fork.

Add butter or olive oil and a pinch of salt.

Tips for Perfection
