Oven-Baked Cabbage Burgers
Thick cabbage “steaks” brushed with garlic-herb olive oil, baked until caramelized, then topped with melty cheese and simple burger-style toppings. A great vegetarian main or hearty side.

Ingredients
1 large green or white cabbage
3 tbsp olive oil
2 cloves garlic, minced
½ tsp salt
¼ tsp black pepper
½ tsp paprika (optional, mild)
½ tsp dried oregano or thyme
Toppings (choose any)
4 slices cheese (cheddar, mozzarella, or halloumi)
Tomato slices
Red onion rings
Lettuce or arugula
Greek yogurt or mayo
Mustard or honey-mustard (optional)
Instructions
1. Prep Cabbage
1. Preheat oven to 200°C (400°F).
2. Remove loose outer leaves.
3. Slice cabbage into 2–2.5 cm thick rounds, keeping the core intact.
2. Season
1. Place cabbage rounds on a lined baking sheet.
2. Mix olive oil, garlic, salt, pepper, paprika, and herbs.
3. Brush generously on both sides of cabbage.
3. Bake
1. Bake for 25 minutes, flipping once halfway.
2. Add cheese slices on top.
3. Return to oven for 5–10 minutes until cheese melts and cabbage is golden.
Serve as “Burgers”
Place cabbage steak on a plate or bun.
Add tomato, onion, greens, and yogurt sauce.
Eat with fork & knife or as a sandwich.
Tips & Variations
Extra crispy: Broil for 2 minutes at the end.
Mediterranean style: Top with feta, olives & lemon.
Protein boost: Add a fried egg on top.
Vegan: Skip cheese or use plant-based cheese.
