1 medium yellow onion, thinly sliced
3 cloves garlic, minced
3 tablespoons extra virgin olive oil
1 teaspoon fresh thyme leaves (or ½ tsp dried)
1 teaspoon fresh rosemary, finely chopped (optional)
½ teaspoon Herbes de Provence (optional but traditional)
Salt and freshly ground black pepper to taste
¼ cup grated Parmesan cheese (optional, for topping)

Instructions
Preheat & Prepare
Preheat oven to 375°F (190°C).
Lightly grease a baking dish (preferably oval or round) with olive oil.
Build the Flavor Base
Spread sliced onions evenly across the bottom of the dish.
Sprinkle minced garlic over the onions and drizzle lightly with olive oil.
Arrange the Vegetables
Alternate slices of zucchini, yellow squash, tomato, and eggplant vertically in tight rows.
