INGREDIENTS:

4 boneless, skinless chicken breasts

1 lb fresh green beans, trimmed

3 tablespoons olive oil

4 tablespoons butter, divided

4 cloves garlic, minced

1/4 cup chicken broth

Juice of 1 lemon

Zest of 1 lemon

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

 INSTRUCTIONS:

1. Preheat Oven: Preheat your oven to 400°F (200°C).

2. Season the Chicken: Season the chicken breasts with salt, pepper, thyme, and rosemary on both sides.

3. Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear until golden brown on both sides, about 3-4 minutes per side. Remove the chicken from the skillet and set aside.

4. Cook the Green Beans: In the same skillet, add 2 tablespoons of butter and the green beans. Sauté for 4-5 minutes until the beans are tender-crisp. Season with a pinch of salt and pepper.

5. Make the Sauce: Add the remaining 2 tablespoons of butter and the minced garlic to the skillet. Sauté for about 30 seconds until fragrant. Add the chicken broth, lemon juice, and lemon zest, stirring to combine.

6. Combine and Bake: Return the chicken breasts to the skillet, nestling them among the green beans. Spoon some of the sauce over the chicken. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).

7. Serve: Garnish with fresh parsley and serve hot.

NOTES:

Variations: Add other vegetables such as cherry tomatoes, mushrooms, or asparagus for more variety.

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.

Serving Suggestions: Pair with a side of rice, quinoa, or crusty bread to soak up the delicious lemon garlic butter sauce.
