Instructions:

  1. Pasta should be cooked as directed on the package until it is al dente. After draining, set away.
  2. One tablespoon of olive oil should be heated over medium-high heat in a big skillet. Add the diced chicken breasts and simmer for 5 to 6 minutes, or until browned and cooked through. After taking the chicken out of the skillet, set it aside.
  3. Add the last tablespoon of olive oil to the same skillet. Add the chopped onion and minced garlic, and sauté for two to three minutes, or until the onion becomes transparent.
  4. Cook the diced zucchini and sliced bell pepper in the skillet for a further three to four minutes, or until they begin to soften.
  5. When the cherry tomatoes start to soften, add them to the skillet and simmer for a further two minutes.
  6. After cooking, add the chicken back to the skillet. Add salt, pepper, and dried Italian herbs to taste while seasoning the mixture. Toss to thoroughly mix in all the ingredients.
  7. When the pasta is ready, add it to the skillet and toss it all together until the pasta is thoroughly covered with the vegetable and chicken combination.
  8. If needed, adjust the seasoning by tasting it.
    If preferred, top the heated spaghetti with chicken and veggies with freshly chopped basil leaves and grated Parmesan cheese.
