Snow Peas with Shrimp Stir-fry

Snow Peas with Shrimp Stir-fry is a simple and delicious stir-fry made with hard-boiled quail eggs, juicy giant shrimp, crisp and sweet snow peas, and stir-fried vegetables in a flavorful sauce. Serve it with noodles or steamed rice for a tasty family dinner in the middle of the week!

Ingredients

  • ¼ cup light soy sauce (Kikkoman)
  • ½ cup water
  • ¼ cup oyster sauce
  • 2 tablespoons Chinese cooking wine
  • 1 tablespoon corn starch
  • 1 tablespoon sugar
  • ¼ teaspoon pepper
  • olive oil
  • 1 pound snow peas, ends trimmed
  • 1 large carrot, peeled and cut thinly in a bias
  • 2 stalks celery, cut thinly in a bias
  • 12 quail eggs, hardboiled and peeled
  • ½ pound large shrimp, peeled and deveined
  • 1 onion, peeled and sliced thinly
  • 2 cloves garlic, peeled and minced

Instructions:

  1. Soy sauce, water, oyster sauce, Chinese cooking wine, cornstarch, sugar, and pepper should all be combined in a bowl. Until the cornstarch dissolves, stir. Put aside.
    Heat 1 tablespoon of oil in a wok or large pan over medium heat. Cook for ten seconds or so after adding the snow peas. Drain on paper towels after taking out of the pan.
  2. Cook the celery and carrots in the pan for approximately 30 seconds, or until they are half done. Drain on paper towels after taking out of the pan.
  3. If necessary, add one more tablespoon of oil to the pan. Cook for 2 to 3 minutes, or until the shrimp become pink, after adding them. Drain on paper towels after taking out of the pan.
  4. Clean the wok as necessary. Pour in one spoonful of oil. Cook the garlic and onions until they are tender.
  5. Add cornstarch to the pan and stir-fry the sauce mixture to distribute it. Bring to a boil.
  6. Add the shrimp, quail eggs, celery, carrots, and snow peas as it starts to thicken. Keep cooking until well heated, approximately 2 to 3 minutes.
