Ingredients:
- 1 lb chicken breast, cut into thin strips
- 2 tablespoons olive oil
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1 small head of green cabbage, thinly sliced
- 1 red bell pepper, thinly sliced

- 2 tablespoons soy sauce

Instructions:
Cook the Chicken:
- In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken strips and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onion and cook for about 3 minutes until it starts to soften. Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Cook the Vegetables: Add the sliced cabbage, red bell pepper, and julienned carrot to the skillet. Cook for about 5-7 minutes, stirring frequently, until the vegetables are tender but still crisp.
