Apple cranberry coleslaw
A refreshing and colorful coleslaw with crisp apples, tart dried cranberries, and a creamy dressing. This salad is the perfect balance of sweet and tangy flavors, making it a great side dish for BBQs, holiday meals, or a light lunch.
Ingredients
For the coleslaw:
4 cups shredded green cabbage (or coleslaw mix)
1 cup shredded red cabbage (optional for color)
1 large apple (Honey crisp or Fuji), julienned or thinly sliced
½ cup dried cranberries
½ cup shredded carrots
¼ cup chopped pecans or walnuts (optional, for crunch)
2 tbsp finely chopped red onion (optional)
For the dressing:
½ cup mayonnaise (or Greek yogurt for a lighter version)
1 tbsp apple cider vinegar
1 tbsp honey or maple syrup
1 tsp Dijon mustard
¼ tsp salt (or to taste)
¼ tsp black pepper
½ tsp poppy seeds (optional)
Instructions
1. Prepare the ingredients: Shred the cabbage and carrots if not using a pre-mixed coleslaw blend. Thinly slice the apple and chop the nuts and onions.
2. Mix the dressing: In a small bowl, whisk together mayonnaise (or yogurt), apple cider vinegar, honey, Dijon mustard, salt, pepper, and poppy seeds. Adjust seasoning as needed.
3. Combine everything: In a large bowl, toss the cabbage, apple, carrots, cranberries, nuts, and red onion together. Pour the dressing over and mix well.
4. Chill and serve: Let the coleslaw sit in the refrigerator for at least 20-30 minutes before serving to allow the flavors to meld. Serve chilled.
Recipe Notes
Apple choices: Honey crisp, Fuji, or Gala apples work best for sweetness and crunch. If you prefer a tart flavor, use Granny Smith.
Make-ahead tip: This coleslaw can be made a few hours in advance. If making the night before, store the dressing separately and toss it in before serving to keep the apples crisp.
Healthier swaps: Substitute Greek yogurt for mayo for a lower-fat version, and use maple syrup instead of honey for a refined sugar-free option.
Nut-free version: Omit nuts if allergies are a concern, or use sunflower seeds for a crunchy alternative.
