Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts
2 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
½ tsp salt
½ tsp black pepper
Toothpicks or kitchen twine (to secure)

1 tbsp olive oil
2 cups fresh spinach, chopped
1 red bell pepper, diced
1 yellow bell pepper, diced
2 garlic cloves, minced
¼ tsp salt
¼ tsp black pepper
½ cup shredded mozzarella or crumbled feta cheese (optional)
Instructions:
1. Prep Chicken:
Place chicken breasts on a cutting board. Carefully slice a pocket into the side of each breast, being sure not to cut all the way through.
Rub the outside of the chicken with olive oil, garlic powder, paprika, salt, and pepper. Set aside.
2. Make the Stuffing:
In a skillet over medium heat, heat 1 tbsp olive oil.
Sauté garlic for 30 seconds, then add chopped peppers and cook for 3–4 minutes until slightly softened.
Add chopped spinach and cook until wilted, about 2 minutes.
Season with salt and pepper. Remove from heat and stir in cheese if using. Let cool slightly.
3. Stuff the Chicken:
Divide the veggie mixture evenly and spoon it into each chicken pocket.
Secure with toothpicks or tie with kitchen twine to hold the filling.
4. Grill the Chicken:
Preheat your grill or grill pan to medium-high heat.
Grill stuffed chicken for 6–8 minutes per side, or until internal temperature reaches 165°F (74°C) and the chicken is nicely charred.
