For the Borek Rolls:
6 sheets phyllo pastry (thawed if frozen)

¼ cup fresh parsley, chopped
For the Dill Yogurt Dip:

2 tbsp fresh dill, finely chopped
1 tbsp lemon juice
1 garlic clove, minced
Salt and pepper, to taste
Instructions
Step 1: Prepare Filling
1. Heat olive oil in a skillet over medium heat.
2. Add onion and cook until soft, about 5 minutes.
3. Add garlic, grated carrots, cumin, coriander, chili flakes (if using), salt, and pepper. Cook 5-7 minutes until carrots soften. Remove from heat.
4. Stir in crumbled feta and parsley. Let cool.
Step 2: Assemble Borek Rolls
1. Preheat oven to 375°F (190°C).
2. Lay one sheet of phyllo on a clean surface and brush lightly with olive oil.

5. Place rolls on a baking sheet lined with parchment paper, seam side down. Brush tops with olive oil.
Step 3: Bake
1. Bake for 20-25 minutes, until golden brown and crispy.
Step 4: Make Dill Yogurt Dip
1. In a small bowl, mix Greek yogurt, dill, lemon juice, garlic, salt, and pepper.
Step 5: Serve
1. Serve borek rolls warm with dill yogurt dip on the side.
Notes
Handle phyllo gently to avoid tearing. Cover unused sheets with a damp towel.
These rolls can be frozen before baking; bake from frozen, adding a few extra minutes.
Tips
Add a handful of toasted pine nuts or raisins to the filling for extra texture and sweetness.
For a vegan version, substitute feta with a plant-based cheese and use a dairy-free yogurt for the dip.
