One Pot Smoky Halloumi Pasta
Ready in: 30 minutes
Serves: 2–3
Ingredients:
200g halloumi, cut into cubes
200g pasta (penne, fusilli, or rigatoni work well)
1 tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 tsp smoked paprika
½ tsp chili flakes (optional, for heat)
1 tbsp tomato paste
400g can chopped tomatoes
500ml vegetable stock
1 tsp sugar (balances the tomatoes)
Salt and pepper, to taste
Fresh basil or parsley, for garnish (optional)
Grated parmesan or vegan alternative, for serving (optional)
Instructions:
Sear the halloumi:
Heat the olive oil in a large pot or deep skillet over medium heat.
Add the halloumi cubes and fry until golden on all sides (about 5–7 minutes).
Remove and set aside.
Sauté the aromatics:
In the same pot, add chopped onion. Cook for 3–4 minutes until softened.
Stir in garlic, smoked paprika, and chili flakes. Cook for 1 minute until fragrant.
Build the sauce
Stir in the tomato paste, then add chopped tomatoes, vegetable stock, and sugar.
Bring to a simmer and stir in the dry pasta.
Simmer:
Cover and simmer for 10–12 minutes, stirring occasionally, until the pasta is cooked and the sauce thickens. Add more stock or water if needed.
Finish the dish:
Stir the halloumi back into the pot for the last 2 minutes to warm through.
Taste and adjust seasoning.
Serve:
Garnish with fresh herbs and grated cheese if using.
Serve hot, straight from the pot!
Variations:
Add roasted red peppers or spinach for more veggies.
Use smoked mozzarella or vegan halloumi alternatives.
Add a splash of cream or oat milk for a creamy twist.
