Creamy Radish Cucumber Salad

Ingredients:

1 cup radishes, thinly sliced

1 large cucumber, thinly sliced (peeled or unpeeled as you prefer)

2–3 tbsp red onion, thinly sliced (optional)l

1/2 cup sour cream or Greek yogurt

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

1 tbsp lemon juice or white wine vinegar

1 tsp Dijon mustard (optional, for tang)

Salt and black pepper, to tast

1/2 tsp sugar (optional, to balance flavors)

Instructions:

Prep the veggies:

Slice radishes and cucumber thinly (a mandoline helps) and place them in a large bowl. Add red onion if using.

Make the dressing:

In a separate bowl, whisk together sour cream (or yogurt), dill, lemon juice, mustard, salt, pepper, and sugar until smooth.

Combine & chill:

Pour the dressing over the veggies and toss until evenly coated. Let it chill in the fridge for 15–30 minutes to allow flavors to meld.

Serve:

Garnish with extra dill or cracked black pepper before serving.

Variations:

Add sliced green onions or chopped chives for extra bite.

For more crunch, toss in a handful of sunflower seeds or toasted almonds.

Make it vegan by using plant-based yogurt or sour cream.
