Chicken Primavera Recipe Servings: 4

Ingredients:
2 boneless, skinless chicken breasts, sliced into strips
8 oz pasta (penne or fettuccine work well)
2 tablespoons olive oil
1 small red bell pepper, sliced
1 small yellow bell pepper, sliced
1 zucchini, sliced into half-moons
1 cup broccoli florets
1/2 cup cherry tomatoes, halved
3 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional
1/2 cup heavy cream or 1/3 cup grated Parmesan (optional for creamy version)
Salt & pepper, to tast
Fresh basil or parsley, chopped (for garnish)
Instructions:
Cook Pasta:
Boil pasta in salted water until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
Cook Chicken
Heat 1 tbsp olive oil in a large skillet over medium-high heat.
Season chicken with salt and pepper. Sauté until golden brown and cooked through (5–7 minutes). Remove and set aside.
Sauté Vegetables:
Inhe same pan, add remaining oil and sauté garlic and red pepper flakes (if using) for 30 seconds.
Add bell peppers, zucchini, and broccoli. Cook for 5–6 minutes until tender-crisp.
Add cherry tomatoes last and sauté another 2 minutes.
Combine:
Return chicken to the pan. Stir in cooked pasta.
Add reserved pasta water a little at a time to loosen the sauce.
(Optional) Stir in cream or Parmesan for a richer sauce. Heat until warmed through.
Finish:
Taste and adjust seasoning.
Garnish with fresh herbs and serve hot
