2 large eggs

200g (7 oz) cream cheese or whipped goat cheese
1 tbsp lemon juice

1. Prepare the Pancake Batter
In a blender, combine spinach, milk, eggs, and olive oil. Blend until smooth and bright green.
Add flour, baking powder, and salt. Blend again until fully combined.
Let batter rest for 5 minutes.
2. Cook the Pancakes
Heat a non-stick skillet over medium heat and brush lightly with olive oil.
Pour in about ¼ cup of batter, swirling to spread evenly into a thin pancake.
Cook for 1–2 minutes until the edges lift, then flip and cook for another 30–60 seconds.
Repeat with remaining batter, stacking pancakes on a plate.
3. Prepare the Filling
In a small bowl, mix cream cheese with lemon juice, dill, and pepper until smooth.
4. Assemble the Pancakes
Spread a layer of herbed cream cheese over each pancake.
Lay slices of smoked salmon on top.
Roll up tightly (or fold into quarters) and serve.
