Ingredients
For the Fritters:
1 medium zucchini, grated
1 medium carrot, grated
1 small onion, finely chopped (optional but adds flavor)
2 eggs, lightly beaten
¼ cup whole wheat flour or all-purpose flour
¼ cup breadcrumbs (or oat flour for a healthier option)
2 tbsp fresh parsley or mint, chopped
1 garlic clove, minced
½ tsp salt
¼ tsp black pepper
¼ tsp paprika (optional for color)
Olive oil, for pan-frying
For the Yogurt Garlic Sauce:
½ cup Greek yogurt (or plain thick yogurt)
1 tbsp lemon juice
1 garlic clove, minced or grated
1 tsp olive oil
Salt and pepper, to taste
Optional: a pinch of dried dill or mint
Instructions
1. Prepare the Vegetables
Grate zucchini and carrots, then place them in a clean kitchen towel.
Squeeze out as much water as possible — this step is key to crispy fritters.
2. Make the Batter
In a large bowl, mix grated zucchini, carrot, onion, eggs, flour, breadcrumbs, garlic, parsley, salt, pepper, and paprika.
Stir until the mixture just holds together — if it’s too wet, add 1–2 tbsp more flour or breadcrumbs.
3. Fry the Fritters
Heat 2–3 tbsp olive oil in a non-stick pan over medium heat.
Scoop about 2 tablespoons of batter per fritter and flatten slightly.
Cook for 3–4 minutes per side, until golden brown and crisp.
Transfer to a paper towel–lined plate to drain excess oil.
4. Make the Sauce
In a small bowl, mix yogurt, lemon juice, garlic, olive oil, salt, and pepper.
Adjust seasoning to taste — add dill or mint if desired.
5. Serve
Serve fritters warm with a generous dollop of yogurt garlic sauce.
Garnish with extra herbs or a drizzle of olive oil.
Tips & Notes
Make sure to squeeze out all moisture from zucchini — this makes fritters crisp, not soggy.
You can bake them at 400°F (200°C) for 20–25 minutes (flip halfway) for a lighter version.
Add crumbled feta or grated Parmesan for extra flavor.
