Mediterranean Creamy Chicken with Potatoes, Olives & Spaghetti

Tender chicken simmered in a velvety Mediterranean-style creamy sauce with potatoes, garlic, herbs, and olives—served over perfectly cooked spaghetti. Comforting, flavorful, and surprisingly easy.

Ingredients

For the Chicken & Sauce

500 g boneless chicken breasts or thighs

2 tbsp olive oil

1 medium onion, finely chopped

3 garlic cloves, minced

1 cup baby potatoes or diced potatoes

1 cup chicken broth

1/2 cup heavy cream OR Greek yogurt

1/4 cup pitted green or black olives

1 tbsp lemon juice

1 tsp dried oregano

1/2 tsp dried thyme

1/2 tsp salt

1/4 tsp black pepper

Optional: 1/4 cup grated Parmesan

For the Spaghetti

200–250 g spaghetti

1 tbsp olive oil

Pinch of salt

Instructions

1. Cook the spaghetti

Bring a pot of salted water to a boil.

Add spaghetti and cook until al dente (8–10 minutes).

Drain, toss with 1 tbsp olive oil, set aside.

2. Sear the chicken

Heat 2 tbsp olive oil in a deep pan over medium heat.

Season chicken with salt, pepper, oregano, and thyme.

Sear for 4–5 minutes per side until slightly golden.

Remove and set aside (it will finish cooking in sauce).

3. Make the creamy Mediterranean sauce

In the same pan, add onion and saute 2 minutes.

Add garlic and potatoes, cook 2–3 minutes.

Pour in chicken broth and bring to a simmer.

Add the chicken back into the pan.

Cover and cook for 10–12 minutes until potatoes soften.

Stir in:

cream

olives

lemon juice

Parmesan

Simmer 3–4 minutes until the sauce thickens and becomes creamy.

4. Serve

Plate a portion of spaghetti, spoon the creamy chicken + potatoes + olives on top, and drizzle extra sauce.

Garnish with:

Fresh parsley

Lemon zest

A few extra olives

Tips

Lighter version: Use Greek yogurt instead of heavy cream.

More Mediterranean: Add spinach, sun-dried tomatoes, or roasted peppers.

Extra creamy: Stir 1 tsp cornstarch into the cream before adding.

One-pot option: Skip the spaghetti and add more potatoes to make it fully one-pan.
