Ingredients

For the Grilled Chicken

500g chicken breast, sliced or pounded thin

1 tbsp olive oil

1 tsp garlic powder

1 tsp dried oregano

½ tsp paprika

½ tsp salt

½ tsp black pepper

1 tbsp lemon juice

For the Roasted Veggies

1 zucchini, sliced into half moons

1 red or yellow bell pepper, sliced

1 cup broccoli florets

1 tbsp olive oil

½ tsp dried oregano

½ tsp salt

¼ tsp pepper

For the Creamy Pasta

1½ cups short pasta (penne, rotini, bowtie)

½ cup pasta water

1 tbsp olive oil

1 clove garlic, minced

½ cup milk

¼ cup Greek yogurt (for protein + creaminess)

¼ cup Parmesan cheese

½ tsp dried basil

½ tsp oregano

Salt & pepper to taste

Optional Toppings

Fresh parsley or basil

Instructions

1. Grill the Chicken

Mix chicken with olive oil, lemon juice, garlic powder, oregano, paprika, salt, and pepper.

Heat a grill pan or skillet over medium-high.

Cook chicken 5–6 minutes per side until golden and cooked through.

Remove and slice.

2. Roast the Veggies

Preheat oven to 200°C (400°F).

Toss zucchini, peppers, and broccoli in olive oil, oregano, salt, and pepper.

Spread on baking tray.

Roast for 15–18 minutes until lightly golden.

3. Make the Creamy Pasta

Cook pasta until al dente. Reserve ½ cup pasta water.

In a pan, heat olive oil → add garlic and saute 30 seconds.

Add milk and bring to a gentle simmer.

Lower heat → whisk in Greek yogurt and Parmesan.

Add oregano, basil, salt, and pepper.

Toss in cooked pasta.

Add splashes of pasta water until creamy and smooth.

4. Assemble the Bowl

In each bowl:

Add a serving of creamy pasta.

Top with a generous scoop of roasted veggies.

Add sliced grilled chicken on top.

Finish with herbs, cheese, and lemon.

Tips for Extra Flavor

Ultra creamy sauce: Add 2 tbsp cream cheese.

Mediterranean twist: Add olives, sun-dried tomatoes, or cherry tomatoes.

Make it spicy: Add chili flakes or drizzle hot honey on the chicken.
