Grilled Chicken Breast with Steamed Veggie Medley :

Ingredients

Chicken:

1 chicken breast, butterflied or thin-cut

1 tbsp olive oil

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp black pepper

1/2 tsp paprika

Salt to taste

Veggie Medley:

1 cup broccoli florets

1 cup cauliflower florets

1 large carrot, sliced

 

1/2 red bell pepper, sliced

 

6–8 cherry tomatoes

 

Salt & pepper

 

1 tsp olive oil (optional)

 

Extras:

 

Lettuce for plating (optional)

Season & Cook the Chicken

Rub chicken with olive oil, garlic powder, onion powder, paprika, pepper, and salt.

Grill or pan-sear 4–6 minutes per side until golden and cooked through.

 

Steam the Veggies

Steam broccoli, cauliflower, and carrot slices for 5–7 minutes.

Add red bell pepper and cherry tomatoes in the last 2 minutes so they stay bright.

Season lightly with salt, pepper, and a drizzle of olive oil.

 

Assemble

Line the container or plate with lettuce (optional).

Add the grilled chicken on one side and the colorful veggie medley on the other.
