Pistachio Cranberry Chia Bar
A chewy, crunchy bar packed with pistachios, dried cranberries, chia seeds, and oats. Naturally sweetened with honey or maple syrup, these bars are nutrient-dense, easy to make, and ideal for a healthy snack or holiday treat.

Ingredients
1 cup rolled oats
½ cup pistachios, roughly chopped
½ cup dried cranberries
2 tbsp chia seeds
¼ cup almond butter or peanut butter
¼ cup honey or maple syrup
1 tsp vanilla extract
Pinch of salt
Optional: 1 tsp orange zest for festive flavor
Instructions
1. Prepare the dry ingredients
In a large bowl, mix oats, pistachios, cranberries, chia seeds, salt, and orange zest (if using).
2. Make the binder
In a small saucepan over low heat, gently warm almond butter + honey until smooth and combined.
Stir in vanilla extract.
3. Combine
Pour warm almond butter-honey mixture over the dry ingredients.
Stir until everything is evenly coated.
4. Press into pan
Line an 8×8-inch pan with parchment paper.
Press mixture firmly into the pan to form an even layer.
5. Chill
Refrigerate for at least 1 hour until firm.
6. Slice & Serve
Lift from pan using parchment paper.
Cut into 12 bars.
Store in airtight container in the fridge for up to 1 week.
