Ingredients

Potato Dough

3 large potatoes, boiled and mashed

½ tsp salt

½ tsp black pepper

½ tsp garlic powder

2 tbsp cornflour or all-purpose flour

2 tbsp grated cheese

Mushroom Filling

1½ cups mushrooms, finely chopped

1 small onion, very finely chopped

1 tbsp olive oil

½ tsp dried thyme or oregano

Salt & pepper, to taste

For Coating & Frying

½ cup breadcrumbs

Oil for shallow frying

Instructions

Step 1: Prepare the Mushroom Filling

Heat oil/butter in a pan.
Saute onion until soft.
Add mushrooms, thyme, salt, and pepper.
Cook until mushrooms release moisture and become dry.
Cool completely.

Step 2: Make the Potato Dough

In a bowl, mix mashed potatoes, salt, pepper, garlic powder, flour, and cheese (if using).
The mixture should be soft but not sticky.

Step 3: Shape the Cakes

Take a small portion of potato mixture and flatten it in your palm.

Place 1–2 tsp mushroom filling in the center.

Cover with more potato mixture and seal edges gently.

Shape into a round or oval cake.

Step 4: Coat

Roll each cake lightly in breadcrumbs.

Step 5: Fry

Heat oil in a shallow pan.
Fry cakes on medium heat until golden brown on both sides.
Drain on paper towels.

Tips

Make sure mushroom filling is dry to avoid breaking.

Chill shaped cakes for 10 minutes before frying for better shape.

You can air-fry at 180°C for 12–15 minutes, flipping once.

Add a little Parmesan to breadcrumbs for extra crunch.
