Bacon Cheddar Spinach Squares

Ingredients
6 slices bacon, cooked and crumbled
1 cup fresh spinach, finely chopped
½ cup shredded cheddar cheese
½ cup all-purpose flour
½ tsp baking powder
½ tsp salt
¼ tsp black pepper
3 eggs
½ cup milk (or Greek yogurt thinned with milk)
2 tbsp olive oil
Optional: 1 small onion, finely chopped
Instructions
1. Preheat & prep pan
Preheat oven to 375°F (190°C).
Grease or line an 8×8-inch baking pan.
2. Cook bacon & vegetables
Cook bacon until crisp; crumble.
Saute onion (if using) and spinach for 2–3 minutes until wilted. Cool slightly.
3. Mix batter
In a bowl, whisk eggs, milk, and olive oil.
Stir in flour, baking powder, salt, and pepper until smooth.
Fold in bacon, spinach, onion, and cheddar.
4. Bake
Pour batter into prepared pan.
Bake 20–25 minutes, until golden and set.
Let cool slightly, then cut into squares.
5. Serve
Serve warm or at room temperature.
Optional: sprinkle extra cheddar or chopped herbs on top.
Tips & Variations
Add sun-dried tomatoes or bell peppers for extra color.
Use feta instead of cheddar for a Mediterranean twist.
