 Ingredients

3 cups all-purpose flour

1½ tsp salt

½ tsp instant or active dry yeast

1½ cups warm water

2 tbsp olive oil

3–4 garlic cloves, finely minced

1½ tbsp fresh rosemary, finely chopped
(or 1 tsp dried rosemary)

 Instructions

Mix the Dough

In a large bowl, combine flour, salt, and yeast.

 First Rise (Long & Slow)

 Shape the Dough

Let rest 30 minutes.

 Preheat Oven & Pot

Place a Dutch oven (with lid) in the oven.
Preheat to 230°C / 450°F for at least 30 minutes.

 Bake

Carefully remove hot Dutch oven.
Place dough inside (on parchment if preferred).
Cover with lid and bake:

  • 30 minutes covered
  • Remove lid, bake 10–15 minutes uncovered until deep golden brown

 Cool

Remove bread and cool on a rack for 20–30 minutes before slicing.
