Ingredients

2 medium zucchinis, sliced thinly

200 g fresh spinach, washed and chopped

1 small onion, finely chopped

2 garlic cloves, minced

200 g feta cheese, crumbled

2 large eggs

½ cup milk or cream

3 tbsp olive oil

1 tsp dried oregano

½ tsp dried thyme or rosemary

Salt and black pepper, to taste

Optional: ¼ cup grated Parmesan for topping

Instructions

1. Preheat oven

Preheat oven to 180°C (350°F). Grease a medium baking dish with olive oil.

2. Sauté aromatics & spinach

Heat 1 tbsp olive oil in a pan. Sauté onion and garlic for 3–4 minutes until soft. Add spinach and cook until wilted. Season lightly with salt and pepper.

3. Prepare egg mixture

In a bowl, whisk eggs, milk or cream, oregano, thyme, salt, and pepper. Stir in half of the crumbled feta.

4. Layer vegetables

In the prepared baking dish, layer half of the zucchini slices. Spread sautéed spinach and onion over zucchini. Top with remaining zucchini slices.

5. Pour egg mixture

Pour the egg and feta mixture evenly over the layered vegetables. Sprinkle remaining feta and Parmesan (if using) on top.
