Ingredients

700 g (1½ lb) boneless, skinless chicken breast or thighs, cubed

3 tbsp extra-virgin olive oil

Zest of 1 lemon

1 tsp dried oregano

½ tsp paprika

1 tsp salt

Instructions

1. Marinate the chicken

In a large bowl, whisk olive oil, lemon zest, lemon juice, garlic, black pepper, oregano, paprika, and salt.

Add chicken cubes and toss until well coated.
Cover and marinate 30 minutes (or up to 8 hours refrigerated).

2. Prepare skewers

If using wooden skewers, soak in water for 20 minutes.
Thread marinated chicken evenly onto skewers.

3. Cook the skewers

Grill method:

Preheat grill to medium-high heat.

Grill skewers 4–5 minutes per side until golden and cooked through.

Oven method:

Preheat oven to 220°C (425°F).

Bake on a lined tray 10–12 minutes, turning once.

Pan method:

Heat a grill pan over medium-high heat.

Cook skewers 8–10 minutes, turning occasionally.

Chicken is done when internal temperature reaches 74°C (165°F).

4. Serve

Rest skewers 2–3 minutes.
Serve with lemon wedges and a drizzle of olive oil.
