2 tbsp olive oil

Salt & black pepper, to taste

Whipped Ricotta

¾ cup ricotta cheese

1 tbsp olive oil

Zest of ½ lemon

Salt, to taste

Toast

4 thick slices sourdough or rustic bread

Olive oil, for brushing

Chili flakes

Fresh parsley or basil

Shaved Parmesan

Honey drizzle or balsamic glaze

Instructions

1. Toast the bread

Brush bread lightly with olive oil.
Toast in a pan, oven, or toaster until deep golden and crisp. Set aside.

2. Whip the ricotta

In a bowl, mix ricotta, olive oil, lemon zest, and salt until smooth and creamy.
(For extra fluffiness, whip briefly with a fork or blender.)

3. Cook the mushrooms

Heat olive oil (and butter if using) in a wide pan over medium-high heat.
Add mushrooms in a single layer and cook 4–5 minutes undisturbed until deeply browned.

4. Assemble
