Ingredients
For the salad
2 boneless, skinless chicken breasts
4–6 slices bacon
1 large head romaine lettuce, chopped
½ cup croutons (store-bought or homemade)
½ cup grated Parmesan cheese
For seasoning the chicken
1 tbsp olive oil
1 tsp garlic powder
½ tsp smoked paprika
Salt and pepper, to taste
For the creamy Caesar dressing
½ cup mayonnaise
2 tbsp Greek yogurt or sour cream
2 tsp Dijon mustard
1–2 garlic cloves, minced
2 tbsp lemon juice
2 tbsp grated Parmesan
1 tsp Worcestershire sauce (optional)
Salt and pepper, to taste
2–3 tbsp water (to thin, if needed)
Instructions
1. Cook the bacon
Fry bacon in a skillet over medium heat until crispy. Drain on paper towels and chop into bite-sized pieces.
2. Cook the chicken
Season chicken breasts with olive oil, garlic powder, smoked paprika, salt, and pepper.
Grill, pan-sear, or bake at 190°C (375°F) for 15–20 minutes until fully cooked. Slice thinly once rested.
3. Prepare the dressing
Whisk together mayonnaise, Greek yogurt, Dijon mustard, garlic, lemon juice, Parmesan, Worcestershire sauce, salt, and pepper. Thin with water to desired consistency.
4. Assemble the salad
In a large bowl, combine chopped romaine, croutons, bacon, and sliced chicken. Drizzle with dressing and toss gently.
5. Finish & serve
Sprinkle additional Parmesan on top. Serve immediately as a main or side.
