Ingredients

400 g mushrooms (cremini or button), cleaned

3 tbsp extra virgin olive oil

2 tbsp balsamic vinegar

3 garlic cloves, finely minced

1 tsp dried oregano or thyme

½ tsp smoked paprika

Salt & freshly ground black pepper

Fresh parsley or basil

Instructions

1️⃣ Marinate

In a bowl, whisk olive oil, balsamic vinegar, garlic, oregano, paprika, salt & pepper

Add mushrooms and toss gently

Marinate 15–30 minutes (don’t over-marinate)

2️⃣ Skewer

Thread mushrooms onto skewers (if wooden, soak first)

3️⃣ Grill

Preheat grill or grill pan to medium-high

Grill skewers 8–10 minutes, turning often, until mushrooms are tender and lightly charred
