Beans & Greens
2 cups cooked white beans (cannellini or navy)
3 cups kale, chopped
1 cup spinach or mixed greens
3 cloves garlic, minced
2 tbsp olive oil
½ tsp smoked paprika (optional, mild)
Salt & black pepper, to taste
½ cup vegetable or chicken broth
Optional Garnish
Lemon wedges
Chopped parsley
Red pepper flakes (optional, for heat)
👩🍳 Instructions
1️⃣ Sauté Garlic
Heat olive oil in a large skillet or pot over medium heat.
Add garlic and sauté 30–60 seconds until fragrant.
2️⃣ Add Beans & Greens
Stir in beans, kale, and spinach.
Add broth and sprinkle with smoked paprika, salt, and pepper
3️⃣ Roast / Simmer
Cover and cook 10–12 minutes, stirring occasionally, until greens are tender and beans are heated through.
Optional: For extra roast flavor, uncover and cook 3–5 minutes until lightly browned.
4️⃣ Serve
Transfer to a plate or bowl.
Finish with a squeeze of lemon and sprinkle of fresh parsley.
