Total Time: 30–40 minutes
Servings: 8–10 patties
Ingredients
For the Chicken Patties:
2 cups cooked chicken, finely chopped or shredded
1 cup shredded mozzarella or cheddar cheese
1 large egg
½ cup breadcrumbs (regular or panko)
2 tablespoons fresh parsley, finely chopped
2 cloves garlic, minced
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika (optional)
2–3 tablespoons olive oil (for frying)
For the Garlic Herb Dip:
½ cup mayonnaise or plain Greek yogurt
1 tablespoon lemon juice
1 tablespoon finely chopped parsley
1 small clove garlic, minced
Pinch of salt
Instructions
1. Prepare the Mixture
In a large mixing bowl, combine the shredded chicken, cheese, egg, breadcrumbs, parsley, garlic, salt, pepper, and paprika. Mix thoroughly until all ingredients are evenly incorporated. The mixture should be moist but firm enough to shape. If too soft, add a little more breadcrumbs.
2. Shape the Patties
Using your hands or a spoon, scoop about 2 tablespoons of mixture and shape into small round patties or balls. Slightly flatten them to ensure even cooking. Place them on a plate while you finish shaping the rest.
3. Cook Until Golden
Heat olive oil in a large skillet over medium heat. Once hot, add the patties in a single layer without overcrowding the pan. Cook for 3–4 minutes on each side until deeply golden brown and crispy. The cheese inside will melt beautifully, keeping the patties moist and tender. Transfer to a paper towel-lined plate to absorb excess oil.
4. Make the Dip
In a small bowl, combine mayonnaise (or Greek yogurt), lemon juice, parsley, garlic, and a pinch of salt. Stir until smooth and creamy. Refrigerate until ready to serve for the best flavor.
Tips for Extra Crispiness
✔️ Add 1–2 tbsp grated parmesan for deeper flavor.
✔️ Coat patties lightly in extra breadcrumbs before frying.
✔️ For extra crunch, mix a tablespoon of cornflour into the mixture.
✔️ Don’t overcrowd the pan — cook in batches.
