Ingredients

Zucchini Rolls

3 large zucchini

1 tsp olive oil

Pinch of salt

Filling

1½ cups cooked chicken, shredded (or black beans for veg)

½ cup ricotta or cottage cheese

¼ cup shredded mozzarella or cheddar

½ tsp garlic powder

½ tsp cumin

Salt & black pepper, to taste

Sauce & Topping

1 cup enchilada sauce (mild)

½ cup shredded mozzarella or Mexican-blend cheese

Optional garnish: chopped parsley or cilantro

Instructions

1️⃣ Prepare zucchini

Preheat oven to 190°C (375°F).

Slice zucchini lengthwise into thin strips using a knife or mandoline.

Lightly brush with olive oil, sprinkle with salt, and bake for 8–10 minutes until just pliable. Let cool.

2️⃣ Make the filling

In a bowl, mix chicken, ricotta, shredded cheese, garlic powder, cumin, salt, and pepper.

3️⃣ Roll them up

Spread 1–2 tbsp filling onto each zucchini slice.

Roll up gently and place seam-side down in a baking dish.

4️⃣ Add sauce & bake

Pour enchilada sauce evenly over the rolls.

Sprinkle remaining cheese on top.

Bake uncovered for 20–25 minutes, until bubbly and lightly golden.

5️⃣ Serve

Rest 5 minutes, garnish, and serve warm.
