2 large chicken breasts, cut into chunks or strips
2 medium zucchini, sliced
1½ cups cherry tomatoes, halved
3 cloves garlic, minced
1 tbsp olive oil
Creamy Tuscan Sauce
½ cup cooking cream or light cream
¼ cup chicken broth (or water)
2 tbsp grated Parmesan cheese
1 tsp dried Italian seasoning
½ tsp dried oregano
Salt & black pepper, to taste
Optional Add-ins
¼ cup sun-dried tomatoes (not spicy)
Fresh basil or parsley for garnish
👩🍳 Instructions
1️⃣ Preheat & prep
Preheat oven to 190°C (375°F).
Lightly grease a baking dish with olive oil.
2️⃣ Season the chicken
In a bowl, toss chicken with olive oil, garlic, salt, pepper, and half of the Italian seasoning.
3️⃣ Assemble the casserole
Spread chicken evenly in the baking dish.
Add zucchini and cherry tomatoes on top.
4️⃣ Make the sauce
In a small bowl, whisk cream, chicken broth, Parmesan, remaining Italian seasoning, oregano, salt, and pepper.
Pour evenly over the casserole.
5️⃣ Bake
Cover loosely with foil and bake for 20 minutes.
Remove foil and bake another 10–15 minutes until chicken is cooked and sauce is slightly thickened.
6️⃣ Serve
Garnish with fresh basil or parsley.
Serve hot on its own or with rice, pasta, or crusty bread.
