Total Time: 40–45 minutes
Ingredients (serves 4)
For the Gnocchi:
1 lb (450 g) potato gnocchi (store-bought or homemade)
For the Creamed Spinach:
2 tbsp olive oil
2 cloves garlic, minced
1 small onion, finely chopped
10 oz (280 g) fresh spinach (or frozen, thawed and drained)
1 cup (240 ml) heavy cream
¼ cup (25 g) grated Parmesan cheese
½ tsp nutmeg
Salt and black pepper to taste
For the Bake:
1 cup (100 g) shredded mozzarella or fontina cheese
2 tbsp breadcrumbs (optional, for a crunchy topping)
1 tbsp olive oil (if using breadcrumbs)
Instructions
Preheat Oven:
Preheat your oven to 375°F (190°C). Grease a 9×9-inch (23×23 cm) baking dish lightly with butter or oil.
Cook Gnocchi:
Boil gnocchi in salted water according to package instructions (usually 2–3 minutes until they float). Drain and set aside.
Prepare Creamed Spinach:
Add garlic and onion, sauté until fragrant and translucent (2–3 minutes).
Add spinach in batches, cooking until wilted. If using frozen, ensure excess water is drained.
Pour in heavy cream and bring to a simmer. Stir in Parmesan, nutmeg, salt, and pepper. Cook for 3–4 minutes until thickened.
Combine Gnocchi & Spinach:
Add cooked gnocchi to the creamed spinach, gently folding to coat evenly.
Assemble the Bake:
Transfer the gnocchi-spinach mixture into the prepared baking dish. Sprinkle mozzarella over the top. For extra texture, mix breadcrumbs with olive oil and sprinkle on top.
Bake:
Bake for 20–25 minutes until the cheese is melted and golden brown. If you want a crispier top, broil for 1–2 minutes at the end.
Serve:
Let it cool for 2–3 minutes before serving. Optional garnish: fresh parsley or extra Parmesan.
