 Ingredients

2 medium zucchini, grated

1 cup fresh spinach, finely chopped

4–5 bacon strips, chopped

½ medium onion, finely diced

3 large eggs

½ cup milk

¾ cup shredded cheddar or mozzarella

¼ cup grated parmesan (optional, adds depth)

½ cup all-purpose flour (or oat flour for a healthier option)

1 tsp baking powder

½ tsp garlic powder

½ tsp dried oregano or mixed herbs

Salt & black pepper, to taste

Olive oil for greasing

 Instructions

1️⃣ Prep the Zucchini

Grate zucchini and squeeze out excess water using a clean cloth or hands. This is key for a firm slice.

2️⃣ Cook the Bacon

In a pan over medium heat, cook bacon until lightly crispy. Remove and set aside.

In the same pan, sauté onion for 2–3 minutes until soft.

3️⃣ Mix the Batter

In a large bowl, whisk eggs and milk.

Add flour, baking powder, garlic powder, herbs, salt, and pepper. Mix until smooth.

4️⃣ Combine

Fold in zucchini, spinach, cooked bacon, onion, and cheese. Mix gently.

5️⃣ Bake

Preheat oven to 180°C (350°F).

Grease or line a baking dish (20×20 cm / 8×8 inch).

Pour mixture evenly into the dish.

Bake for 35–40 minutes until golden and set in the center.
