Ingredients
3 cups cauliflower rice (fresh or frozen, thawed & squeezed dry)
1½ tbsp olive oil or butter
3 cloves garlic, minced
¼ cup grated parmesan (freshly grated best)
1 tbsp lemon juice (optional, brightens flavor)
Salt & black pepper, to taste
1 tbsp fresh parsley (optional)

1️⃣ Sauté Garlic
Heat olive oil/butter in a wide pan over medium heat. Add garlic and sauté 20–30 seconds until fragrant (don’t brown).
2️⃣ Cook Cauliflower Rice
Add cauliflower rice, season with salt & pepper. Cook 5–7 minutes, stirring, until tender and moisture evaporates.
3️⃣ Finish with Cheese
Lower heat, stir in parmesan and lemon juice (if using). Cook 1 minute until creamy and coated.
4️⃣ Serve
Garnish with parsley and extra parmesan.
