1 cup shredded cheddar or mozzarella cheese

¼ cup red onion, finely chopped

1 tbsp chopped fresh parsley

Burritos

4 large flour tortillas

Olive oil or butter, for brushing

Tater Tots

1 cup frozen tater tots

1 tsp olive oil

Pinch of salt

Instructions

1️⃣ Cook the Potatoes

Preheat oven to 200°C (400°F).

Toss diced potatoes with olive oil, garlic powder, paprika, salt, and pepper.

Roast 15–20 minutes until tender. Set aside.

2️⃣ Prepare Burrito Filling

In a bowl, combine roasted potatoes, shredded cheese, onion, and parsley. Mix gently.

3️⃣ Assemble Burritos

Warm tortillas slightly.

Place filling in the center, fold sides, and roll tightly.

Brush lightly with olive oil or butter.

4️⃣ Bake Burritos & Tater Tots

Place burritos on a lined baking tray.

Spread tater tots on the same tray, drizzle with olive oil.

Bake 12–15 minutes until burritos are golden and cheese is melted, and tater tots are crispy.
