Instructions
1. Roast the Garlic:
Preheat the oven to 400°F (200°C).
Slice the top off the garlic head to expose the cloves, drizzle with 1 tsp olive oil, wrap in foil, and roast for 25–30 minutes until soft and caramelized.
Once cooled, mash the cloves into a smooth paste.
2. Prepare the Herb Crumble:
In a bowl, combine roasted garlic paste, panko breadcrumbs, Parmesan, parsley, thyme, lemon zest, olive oil, salt, and pepper.
Mix until well combined and crumbly.
3. Prepare the Halibut:
Pat the halibut fillets dry and rub lightly with olive oil.
Season both sides with salt and pepper.

Preheat oven to 425°F (220°C).
