Ingredients

Chia Coconut Layer

1 cup oats

½ cup unsweetened shredded coconut

2 tbsp coconut oil

2 tbsp honey or maple syrup

Pinch salt

Instructions

1️⃣ Make the Base

In a bowl mix oats, shredded coconut, melted coconut oil, honey, and salt.

Stir until everything is evenly coated.

Press mixture firmly into a lined small baking dish or container to form the base.

2️⃣ Prepare Chia Pudding

In another bowl whisk coconut milk, chia seeds, honey, lime zest, lime juice, and vanilla.

Let it sit 5 minutes, then stir again to prevent clumps.

3️⃣ Assemble

Spread evenly with a spoon.
