These Easy Broccoli Cheddar Chicken Roll-Ups are a delicious comfort meal made with tender chicken breasts stuffed with creamy broccoli and melted cheddar cheese, then baked until golden. They’re perfect for a quick family dinner, meal prep, or low-carb meal.

Ingredients

Chicken

4 boneless skinless chicken breasts

1 tbsp olive oil

½ tsp salt

½ tsp black pepper

½ tsp garlic powder

Filling

1 cup broccoli florets, finely chopped

1 cup cheddar cheese, shredded

¼ cup cream cheese, softened

½ tsp onion powder

Optional Topping

¼ cup extra shredded cheddar

2 tbsp Parmesan cheese

Instructions

1️⃣ Prepare the Chicken

Preheat oven to 190°C (375°F).
Place chicken breasts between plastic wrap and gently pound them to an even thickness.

2️⃣ Make the Filling

In a bowl mix chopped broccoli, cheddar cheese, cream cheese, and onion powder until well combined.

3️⃣ Fill and Roll

Place a spoonful of the broccoli-cheese mixture onto each chicken breast.
Roll the chicken tightly and secure with toothpicks if needed.

4️⃣ Season

Brush the outside with olive oil and sprinkle with salt, pepper, and garlic powder.

5️⃣ Bake

Place roll-ups in a baking dish. Sprinkle extra cheddar and Parmesan on top.
Bake for 25–30 minutes until chicken is cooked through and cheese is melted.

6️⃣ Serve

Let rest for 5 minutes, then slice and serve warm.
