Ingredients

Main Ingredients

4 bone-in chicken thighs or breasts

4 medium potatoes, cubed

1 red onion, sliced

3 cloves garlic, minced

2 tbsp olive oil

Seasoning

1 tsp Italian seasoning

½ tsp paprika

½ tsp salt

¼ tsp black pepper

Optional Add-ins

1 cup cherry tomatoes

½ bell pepper, sliced

2 tbsp fresh parsley or basil, chopped

 Instructions

1️⃣ Preheat Oven

Preheat oven to 200°C (400°F).

2️⃣ Prepare Ingredients

Cut potatoes into medium cubes and slice onion.

Place potatoes, onion, and garlic in a large baking dish.

3️⃣ Season Everything

Add olive oil, Italian seasoning, paprika, salt, and pepper. Toss well to coat.

4️⃣ Add Chicken

Place chicken pieces on top of the potatoes. Sprinkle a little extra seasoning over the chicken.

5️⃣ Bake

Bake for 40–45 minutes until the chicken is fully cooked and the potatoes are tender and golden.

6️⃣ Garnish and Serve

Top with fresh parsley or basil before serving.

✔ Add Parmesan cheese during the last 10 minutes for a cheesy crust.
