Ingredients
Salad
1 large sweet potato, peeled and cubed
200 g smoked tofu, diced
2 cups mixed salad greens
½ avocado, sliced
½ cup cherry tomatoes, halved
¼ red onion, thinly sliced
2 tbsp pumpkin seeds or sunflower seeds
Dressing
2 tbsp olive oil
1 tbsp lemon juice
1 tsp Dijon mustard
½ tsp maple syrup
¼ tsp salt
¼ tsp black pepper
Instructions
1️⃣ Roast the Sweet Potatoes
Preheat oven to 200°C (400°F).
Toss sweet potato cubes with a little olive oil and bake 20–25 minutes until tender and slightly crispy.
2️⃣ Prepare the Tofu
While potatoes roast, dice the smoked tofu into bite-size cubes.
You can lightly pan-sear it for 3–4 minutes for extra texture.
3️⃣ Make the Dressing
In a small bowl whisk together olive oil, lemon juice, Dijon mustard, maple syrup, salt, and pepper.
4️⃣ Assemble the Salad
In a large bowl combine salad greens, roasted sweet potatoes, tofu, tomatoes, avocado, and onion.
5️⃣ Add Dressing & Serve
Drizzle the dressing over the salad and toss gently.
Top with pumpkin or sunflower seeds before serving.
