Ingredients
Filling
1 large sweet potato, peeled and diced
1 cup black beans, drained and rinsed
1 tbsp olive oil
1 tsp chili powder
½ tsp cumin
½ tsp paprika
½ tsp salt
¼ tsp black pepper

8 small tortillas (corn or flour)
¼ cup shredded cheese
Toppings
1 avocado, sliced
½ cup cherry tomatoes, diced
¼ cup red onion, chopped

Instructions
1️⃣ Roast the Sweet Potatoes
Preheat oven to 200°C (400°F).
Toss diced sweet potatoes with olive oil, chili powder, cumin, paprika, salt, and pepper.
Spread on a baking sheet and roast 20 minutes until tender.
2️⃣ Prepare the Filling
Mix roasted sweet potatoes with black beans in a bowl.
3️⃣ Crisp the Tacos
Fill each tortilla with the sweet potato and bean mixture.
Fold and place on a baking tray. Bake for 8–10 minutes until crispy.
