Ingredients

Protein

3 eggs (scrambled, fried, or boiled)

Vegetables

1 cup spinach

½ avocado, sliced

½ cup cherry tomatoes, halved

½ cucumber, sliced

¼ red bell pepper, chopped

Base

1 cup cooked quinoa or brown rice

Dressing

1 tbsp olive oil

1 tsp lemon juice

Pinch salt and black pepper

Instructions

1️⃣ Cook the Eggs

Prepare eggs as desired (scrambled, fried, or soft-boiled).

2️⃣ Prepare the Bowl

Place quinoa or brown rice in a bowl if using.

3️⃣ Add Vegetables

Add spinach, tomatoes, cucumber, bell pepper, and avocado.

4️⃣ Add the Eggs

Place cooked eggs on top of the vegetables.

5️⃣ Add Dressing
