Vegetables
1 cup spinach
½ avocado, sliced
½ cup cherry tomatoes, halved
½ cucumber, sliced
¼ red bell pepper, chopped
Base
1 cup cooked quinoa or brown rice
Dressing
1 tbsp olive oil
1 tsp lemon juice

Instructions
