Balsamic Glazed Chicken & Orzo with Whipped Feta & Grilled Zucchini 🍗🍝🥒

A flavorful Mediterranean-style dish with sweet balsamic chicken, creamy whipped feta, tender orzo, and smoky grilled zucchini.


Ingredients

For the Chicken & Balsamic Glaze

  • 4 boneless, skinless chicken breasts

  • 1/3 cup balsamic vinegar

  • 2 tablespoons honey

  • 2 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1 teaspoon dried oregano

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

For the Orzo

  • 1 cup orzo pasta

  • 2 cups chicken broth

  • 1 tablespoon olive oil

  • 1 tablespoon lemon juice

  • 1 tablespoon chopped parsley

For the Whipped Feta

  • 1 cup feta cheese

  • 1/3 cup Greek yogurt

  • 1 tablespoon olive oil

  • 1 teaspoon lemon juice

  • 1 small clove garlic

For the Grilled Zucchini

  • 2 medium zucchini, sliced lengthwise

  • 1 tablespoon olive oil

  • Salt and black pepper to taste


Instructions

1. Prepare the Balsamic Glaze

In a small bowl mix:

  • balsamic vinegar

  • honey

  • minced garlic

Set aside.


2. Cook the Chicken

  1. Season chicken with salt, pepper, and oregano.

  2. Heat olive oil in a skillet over medium heat.

  3. Cook chicken 5–6 minutes per side until golden and cooked through.

  4. Pour the balsamic mixture into the pan.

  5. Simmer 3–4 minutes, spooning the glaze over the chicken until slightly thickened.


3. Cook the Orzo

  1. Bring chicken broth to a boil in a saucepan.

  2. Add orzo and cook 8–10 minutes until tender.

  3. Drain if needed, then stir in:

    • olive oil

    • lemon juice

    • parsley


4. Make the Whipped Feta

In a blender or food processor combine:

  • feta cheese

  • Greek yogurt

  • olive oil

  • lemon juice

  • garlic

Blend until smooth and creamy.


5. Grill the Zucchini

  1. Toss zucchini slices with olive oil, salt, and pepper.

  2. Grill in a grill pan or skillet 3–4 minutes per side until tender with grill marks.


To Serve

  1. Spoon whipped feta onto the plate.

  2. Add a serving of orzo.

  3. Place the balsamic glazed chicken on top.

  4. Add grilled zucchini on the side.

  5. Drizzle extra balsamic glaze over everything.
