Couscous olive feta salad
A Couscous Olive Feta Salad is a fresh Mediterranean-style salad that’s quick, healthy, and perfect as a light meal or side dish. It combines fluffy Couscous, salty Feta, and briny Olive with crisp vegetables and a lemon-olive oil dressing.
Ingredients
For the salad
1 cup couscous
1 cup boiling water or vegetable broth
½ cup feta cheese (crumbled)
½ cup olives (sliced – black or kalamata work best)
1 cucumber (diced)
1 cup cherry tomatoes (halved)
¼ red onion (finely chopped)
2 tbsp fresh parsley (chopped)
For the dressing
3 tbsp olive oil
1 tbsp lemon juice
½ tsp salt
¼ tsp black pepper
Optional: ½ tsp dried oregano

1. Prepare couscous
Put couscous in a bowl and pour over boiling water/broth. Cover and let sit 5 minutes, then fluff with a fork.
2. Prep vegetables
Dice cucumber, halve tomatoes, slice olives, and chop onion and parsley.
3. Mix salad
In a large bowl combine couscous, cucumber, tomatoes, olives, onion, parsley, and feta.
4. Make dressing
Whisk olive oil, lemon juice, salt, pepper, and oregano.
5. Combine
Pour dressing over the salad and toss gently.
6. Chill (optional)
Refrigerate 20–30 minutes so flavors blend.
